Justin has been cooking for well over a decade and in his tenure, has worked in everything from high volume hotels to Michelin Star kitchens. He has respect for traditional French techniques and tends to lean towards Japanese and Chinese flavor profiles in his own cooking. What excites him about his time working with the team both at Loring Place (Greywind's sister restaurant where he was most recently sous chef) and at Greywind is being able to continue to put out good food and help the team as a whole create great memories for guests while also taking his own cooking to the next level by following the restaurant's approach to seasonal and well sourced produce. In his free time, Justin enjoys playing video games, collecting statues, traveling, eating and spending time with his wife and dog.
